Ingredients
1 serving
- 1 tablespoon brown rice miso paste
- 1 tablespoon tamari
- 1 tablespoon maple syrup
- 1 tablespoon of water
- drizzle of olive oil
- 8 oz chestnut mushrooms
- 1 clove of garlic
- ½ a 400g tin of butterbeans
- ½ limes
- 1 slice good-quality sourdough bread
- small sprinkle chives
- a pinch of sea salt

Preparation
Step 1
Mix together the miso, tamari, maple syrup, and water in a small bowl. Set aside.
Step 2
Heat a drizzle of olive oil in a frying pan over medium heat. Add the mushrooms and garlic and cook, stirring occasionally, until golden brown, 8-10 minutes. This time allows for the mushrooms to release moisture. Add the miso mixture, and cook, until the mushrooms are coated and glossy, 1-2 minutes. Transfer mushrooms to a small bowl.
Step 3
Tip the butterbeans into the pan and cook, stirring throughout, until warmed through, 1-2 minutes. Transfer to a medium bowl and add the lime juice, a drizzle of olive oil, and a small pinch of salt. Coarsely smash butterbean mixture until well combined.
Step 4
Pile the smashed butterbeans on top of the toast. Then top with the glazed miso mushrooms and fresh chives. Eat immediately.
