- 75ml tahini
- 1 tablespoon ginger
- 1 tablespoon maple syrup
- 1 lemon
- 4 tablespoons boiling water
- pinch of sea salt

Preparation
Step 1
Peel the ginger using the back of a spoon, finely slice in one direction, then chop in the other direction until the ginger is minced into small pieces.
Step 2
Place the tahini, ginger, lemon, maple syrup in a medium bowl, whisk to combine, then add the boiling water and continue whisking until smooth and pourable. It will thicken as your whisk. Season to taste.
