- 12 oz porridge oats
- 2.5 oz dried mango
- 2.8 oz Brazil nuts
- 7 tablespoons of coconut oil
- 6 tablespoons maple syrup
- 1 tablespoon date syrup
- 1 handful sunflower seeds
- 1 teaspoon ground ginger
- 1 oz desiccated coconut

Preparation
Step 1
Preheat the oven to 125C (250F), fan setting.
Step 2
Melt the coconut oil, maple syrup and date syrup in a pan over a gentle heat.
Step 3
Roughly chop the brazil nuts.
Step 4
Then mix the oats, nuts, sunflower seeds, ground ginger and desiccated coconut in a large mixing bowl.
Step 5
Pour the coconut oil and maple syrup over the oats and stir well.
Step 6
Line a baking tray with greaseproof paper and spread the granola mix evenly on-top.
Step 7
Bake in the oven for 40-60 minutes, stirring every 6 minutes so the granola cooks evenly – it should be golden brown by the end of the cooking time.
Step 8
Remove the tray from the oven and leave the granola to cool.
Step 9
Meanwhile, roughly chop the dried mango, before mixing in to the cooled granola.
