- ¼ small red onions
- 1 teaspoon apple cider vinegar
- pinch of salt
- 8 cherry tomatoes
- 1 teaspoon red chillies
- 2 tablespoons coriander

Preparation
Step 1
Very finely chop the onion and transfer to a small bowl. Stir in the apple cider vinegar and salt. Chop the tomatoes and add to the onion. Stir in the chili and coriander. Top the avocado dip with the chunky salsa.
Step 2
Scoop the flesh from the avocados into the bowl of a food processor. Add the lime juice and oil and blend until smooth. Season to taste with salt.
Step 3
Pour the creamy avocado dip into a serving bowl. Make a shallow well in the centre and fill with the tomato salsa, serve immediately.
