- 2 handfuls of hazelnuts
- 3 cooking apples
- 1 teaspoon mixed spice
- 3 tablespoons maple syrup
- 2 teaspoons cornflour
- 1 eating apple
- 1 x 11 oz sheet ready-rolled puff pastry
- splash of plant-based milk
- small handful of sesame seeds
- sprinkle of coconut sugar

Preparation
Step 1
Preheat the oven to 200°C fan / 420°F. Tip the hazelnuts onto a baking tray; roast for 6–8 minutes until deeply golden. Remove from the oven and roughly chop (or roughly crush in a pestle and mortar).
Step 2
Place the cooking apples, mixed spice and maple syrup in a saucepan set over medium heat. Cook for 5–10 minutes, stirring often, until tender but not mushy — watch carefully as the cooking time will vary.
Step 3
Stir in the nuts, cornflour, the eating apple and a splash of water until slightly thickened. Remove from the heat and set aside to cool.
Step 4
Roll out the pastry (leaving it on the sheet of paper that it’s rolled up in) on a shallow baking tray. Cut into 6 rectangles and add a spoonful of the apple mixture to each one. Fold the pastry over to make a triangle and press the edges together to seal — using a fork to crimp them if you like. Brush with milk and poke a few holes in the top to let the steam escape. Scatter over the sesame seeds and coconut sugar (if using).
Step 5
Bake for 25–30 minutes until crisp and golden. Serve with creamy coconut yoghurt or plant-based ice cream.
