- 6 cups Honeycrisp apples (about 6 medium apples), peeled and sliced into 1/2″ wedges
- 2 tsp fresh lemon juice
- 1 1/2 tsp vanilla extract
- 1/4 cup (50g) granulated sugar
- 1/4 cup (50g) light brown sugar, packed
- 2 tbsp cornstarch
- 1 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/8 tsp ground nutmeg
- 1/8 tsp ground cloves
- 2 cups (200g) old fashioned rolled oats (certified gluten free if needed)
- 1 cup (100g) almond flour
- 3/4 cup (150g) light brown sugar, packed
- 1/2 tsp kosher salt
- 1 tsp ground cinnamon
- 3/4 cup (170g) unsalted butter, cold and cubed (regular or plant-based)

If you don’t have almond flour, you can make it by pulsing raw almonds in a food processor until finely ground.
