Ingredients

- 6 oz cashews
- 1kg new potatoes
- 2 tablespoons desiccated coconut
- 1 ripe mangos
- 2.8 oz flaked almonds
- 2.8 oz raisins
- large handful of coriander
- 1 ½ tablespoons of tamari
- 1 ½ tablespoons of curry powder
- ½ lemons
- ½ tablespoon of garam masala
- ½ teaspoon cayenne pepper
- 1 teaspoon ground cinnamon
- 6 fl oz water
- pinch of sea salt
- pinch of sea salt & black pepper

Preparation
Step 1
Cut the potatoes into halves or quarters (depending on their size), then place in a pan of salted water over a medium heat.
Step 2
Bring to the boil, before reducing the temperature and leaving to simmer for 20 minutes until cooked through. Once cooked, drain and leave to cool.
Step 3
Peel and roughly chop the mango.
Step 4
Roughly chop the coriander.
Step 5
Place the coriander, mango, flaked almonds, raisins and 2 tablespoons of desiccated coconut with the potatoes in a large salad bowl and mix together.
Step 6
In a high-speed blender, blend the drained cashews, lemon juice, spices, water, tamari, salt and pepper until smooth.
Step 7
Stir the sauce through the potatoes before serving.
