- 1 large head of cauliflower, cut into florets
- 2 medium russet potatoes, peeled and cut into chunks
- 2 tablespoons unsalted butter
- 1/4 cup sour cream
- Salt and pepper to taste
- Chopped chives for garnish (optional)

Preparation
Step 1
Boil the cauliflower florets and potato chunks in a large pot of salted water until tender, about 15-20 minutes.
Step 2
Drain the vegetables well and return them to the pot.
Step 3
Add butter and sour cream to the pot. Use a potato masher or an immersion blender to mash the vegetables until smooth and creamy.
Step 4
Season with salt and pepper to taste.

Transfer to a serving bowl and garnish with chopped chives if desired.
