Preparation
Step 1
Make the black bean stew according to recipe instructions.
Step 2
Pour the brown rice into a medium saucepan and add 600ml / 20 fl oz water. Place over medium heat, bring to a simmer and cook uncovered for about 30 minutes, until tender.
Step 3
While the rice is cooking, prepare the salsa by placing all of the ingredients together in a medium bowl, toss to combine; add salt and maple syrup, to taste.
Step 4
When the rice has cooked, turn off the heat, cover the saucepan and let it steam gently for 5 minutes. Then spread the rice out onto a large plate to allow it to cool quickly.
Step 5
When the rice has cooled, assemble the salad by layering rice, black beans and salsa in serving bowls.
