- 7 oz unsalted peanuts
- 7 oz pitted Medjool dates
- 8 tablespoons crunchy peanut butter
- 10.6 oz 70% cocoa dark chocolate
- pinch of flaky sea salt

Preparation
Step 1
Line a 16 x 22cm / 6 x 9″ shallow baking tray with baking parchment.
Step 2
Place the peanuts and dates in a food processor and blitz for 1 minute, until they’ve mostly broken down but aren’t completely smooth — the mixture should look like wet sand. Add the peanut butter and blitz briefly to combine.
Step 3
Spoon the peanut mixture onto the baking tray and use a palette knife (or the back of a spoon) to smooth the mixture into an even layer, about 1cm / ½″ thick.
Step 4
Gently melt the chocolate in the microwave on a low heat or in a bain marie; stir in a large pinch of sea salt (to taste). Pour the melted chocolate over the peanut mixture and smooth out in an even layer.
Step 5
Chill in the fridge for 1 hour, then cut into squares and sprinkle over an extra pinch of sea salt. Enjoy immediately or store in an airtight container in the fridge for up to 10 days.
