- 1 16-ounce can refried beans
- 1 ½ cups mozzarella cheese
- 1 tablespoon olive oil
- 2 tablespoons chopped fresh cilantro leaves

Place wrappers on a work surface. With a butter knife, spread 1 tablespoon refried beans over half of each wrapper. Top with 1 tablespoon cheese. Fold the dough over the filling to create a half-moon shape; do not seal.

Heat olive oil in a large skillet over medium heat. Add quesadillas in a single layer and cook until the cheese has melted, about 2 minutes per side.
