Preparation
Step 1
Preheat oven to 350 degrees F. Line a 9 inch pan with parchment paper or alternatively spray with nonstick spray.
Step 2
Whisk flour, salt, cocoa powder and baking soda in a small bowl and set aside.
Step 3
To brown your butter: Melt butter in a saucepan over medium heat. The butter will begin to foam. Make sure you whisk consistently during this process. After a couple of minutes, the butter will begin to brown on the bottom of the saucepan. Continue to whisk and remove from heat immediately as soon as the butter begins to brown and give off a nutty aroma.
Step 4
Immediately transfer the butter to a bowl to prevent burning. Set aside to cool for a few minutes.
Step 5
Once butter is slightly cooled use an electric mixer to beat butter and both sugars in a large bowl until well combined, 2–3 minutes.
Step 6
Add egg and vanilla; beat on medium-high speed until mixture is light and fluffy, 2–3 minutes.
Step 7
Add dry ingredients, reduce speed to low, and mix just to blend. Fold in chocolate chips.
Step 8
Pour into baking pan and bake for 25-30 minutes or until the edges are set and middle no longer wiggles. The middle will look cracked slightly. This is when you know the cookie bars are done.
Step 9
Cool bars for 10 minutes, cut and serve warm. Sprinkle about 1/2 tsp additional sea salt on top if desired. Makes 12-16 bars.
