2 loaves
- 4 medium ripe bananas
- 2 cups whole wheat flour
- 1 1/2 teaspoons baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 3/4 cup granulated sugar
- 1/2 cup canola oil or vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- Cinnamon/Sugar mixture-for sprinkling on top of bread (optional)

This recipe will make 2 (8×4 loaves) or 4 mini loaves. Mini loaves are great for sharing with friends.
Sprinkling cinnamon/sugar mixture on top of the bread is optional but adds a nice touch.
