- 1 lb green beans, ends trimmed
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 small shallot, minced
- Juice of 1 lemon
- Kosher salt and black pepper, to taste
- 2 tablespoons freshly grated Parmesan cheese, optional

Preparation
Step 1
Preheat oven to 400 degrees F.
Step 2
Place the green beans on a large baking sheet and drizzle with olive oil. Add the garlic, shallot, and lemon juice. Toss, using tongs or clean hands, until beans are well coated. Make sure the beans are in an even layer and season with salt and black pepper.
Step 3
Roast the green beans for 10-15 minutes, shaking the pan once halfway through, until the beans are tender, but still slightly crisp.
Step 4
Remove from the oven and sprinkle beans with Parmesan cheese, if using. Serve warm.

Make sure you use a large baking sheet so the green beans can be spaced out. You don’t want to overcrowd the pan or the green beans will get soggy and not crispy.
Use tongs to toss the green beans in the olive oil, garlic, shallot, and lemon juice before roasting.
Don’t overcook the beans; you want them to be nice and crisp. Check at 10 minutes to be safe.
