Ingredients

2 ½ dozen cookies
  • 1/2 cup unsalted butter, at room temperature
  • 1/2 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cup all purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup old fashioned oats
  • 1 cup white chocolate chunks
  • 1 cup pomegranate arils

Chef’s notes

You can gently stir in the pomegranate arils, but I didn't want the cookies to turn pink at all.
If you don't have white chocolate chunks, white chocolate chips will work as well. Enjoy!
