  • 3/4 cup butter, cut into tablespoon pieces
  • 1 1/4 cups packed brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 1 tablespoon pure vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground cinnamon
  • 1 cup old fashioned oats
  • 3/4 cup semi-sweet chocolate chips
  • Flaky sea salt, for sprinkling on bars

If your pan has a lid, let the bars cool and then you can put the lid on tightly. You can also store the bars in an airtight container on the counter. The bars will keep for up to 4 days.
You can also freeze the cookie bars. Cut them into bars and store them in a freezer container or bag for up to 2 months in the freezer. Thaw and serve!
