- 18 oz cheese tortellini
- 3 cups grape tomatoes, halved
- 6 oz pitted black olives, drained and halved
- 1 red bell pepper, stemmed, seeded and chopped
- 1/4 red onion, chopped
- 8 oz salami, chopped
- 1/2 cup chopped pepperoncini peppers
- 1/2 cup shredded Parmesan cheese
- 1/2 cup chopped basil
- Kosher salt and black pepper, to taste
- Italian Dressing

Preparation
Step 1
Cook the tortellini to al dente, according to package instructions. Drain and rinse with cold water. Place the tortellini in a large bowl.
Step 2
Add the tomatoes, olives, red bell pepper, onion, salami, pepperoncini, Parmesan cheese, and basil.
Step 3
Drizzle with desired amount of dressing and toss well.
Step 4
Season with salt and pepper, to taste.
Step 5
Serve at room temperature or chilled. You can garnish with extra basil and Parmesan cheese, if desired.
