- 1 (8 oz) wheel soft-ripened brie cheese, ( cold)
- 2 teaspoons olive oil, (for brushing)
- 2 tablespoons honey, (divided)
- 1 cup diced peaches
- 1/4 cup chopped candied pecans
- 1 tablespoon chopped fresh mint or basil leaves, (for garnish)
- Flaky sea salt, (for sprinkling)
- Crostini or crackers, (for serving)

Preparation
Step 1
Preheat grill or grill pan to medium high heat.
Step 2
Brush the olive oil over both sides of the brie.
Step 3
Place the brie on the grill and grill for 2 to 3 minutes per side or until the brie feels warm and soft on the inside. When flipping the brie, use a spatula, being careful to not break the brie open. Don't overcook the brie or it will melt out and make a mess.
Step 4
Transfer the brie from the grill to a platter. Drizzle with 1 tablespoon of honey and top with diced peaches, candied pecans, and mint or basil. Drizzle with the remaining honey and a sprinkle with a little sea salt.
Step 5
Serve the brie with crostini or crackers.
