  • 3 large avocados
  • 1 large peach, peeled and chopped
  • 1/2 jalapeno pepper, seeded and diced
  • 2 tablespoons diced red onion
  • 3 tablespoons chopped fresh cilantro
  • 1 lime, juiced
  • 2-3 teaspoons diced chipotle peppers in adobo sauce
  • Kosher salt, to taste

Preparation

Step 1

With a sharp knife, cut the avocados in half lengthwise. Remove seed. Scoop out the flesh with a spoon. Place in a bowl. Use a fork to roughly mash the avocado.

Step 2

Add the chopped peaches, jalapeno, red onion, cilantro, lime juice, and diced chipotle peppers. We use 3 teaspoons of diced chipotle peppers, but if you want it a little more mild, use 2. Stir and season with Kosher salt, to taste. Serve immediately.

Make sure you use ripe avocados and a ripe peach. If your fruit is not ripe, you can put it in a paper bag with a banana to help speed up the process.
You can find chipotle peppers in adobo sauce in most grocery stores. They come in a small can.
A little chipotle peppers and adobo sauce goes a long way, you will only need 2-3 teaspoons. You can freeze the leftover peppers and sauce. Remove from the can and place in a freezer container or bag. Make sure you label the peppers.
This guacamole is best the day it is made.
Serve the peach guacamole with tortilla chips, cut up veggies, or alongside any Mexican meal.
