Ingredients

  • 1 cup red lentils, rinsed and picked over
  • 2 cups water
  • 1 small head cauliflower
  • 2 tablespoons olive oil
  • 1 small yellow onion, chopped
  • 1/2 large red bell pepper, seeds removed and chopped
  • 1 celery stick, diced
  • 1 carrot, diced
  • 2 cloves garlic, minced
  • 2 15 oz cans crushed tomatoes
  • 1 8 oz can tomato sauce
  • 1/4 cup ketchup (we use Annie's)
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons red wine vinegar
  • 2 tablespoons brown sugar
  • 1 1/2 teaspoons chili powder
  • 1 teaspoon ground mustard
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Kosher salt and black pepper, to taste
  • 4 whole wheat hamburger buns

For vegan and gluten-free, make sure you choose a Worcestershire sauce that is vegan and gluten-free!
The sloppy joe mixture will keep in the refrigerator for up to 3 days. You can also freeze it for up to 1 month. You might have to add a little liquid to the mixture when you reheat it.
