  • 1/2 cup unsalted butter, cut into tablespoon pieces
  • 1 1/4 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 1/4 teaspoon pumpkin pie spice
  • 1 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 1/2 teaspoons vanilla
  • 3/4 cup pumpkin puree, not pumpkin pie filling
  • 3 cups old-fashioned oats
  • 1 1/2 cups butterscotch chips

You can use chocolate chips instead of butterscotch chips.
Store cookies in an air-tight container for up to 4 days on the counter. These cookies also freeze well.
