  • 1 pound sweet potatoes, washed (I don’t peel the sweet potatoes, but you can)
  • 2 tablespoons olive oil
  • 1 tablespoon cornstarch
  • Kosher salt and freshly ground black pepper, to taste

Cut Your Fries into the Same Size- You want your fries to be the same shape in size, about 1/4-inch, so they cook evenly and are all done at the same time.
Soak in Ice Water- This is an extra step, but a necessary step to remove some of the starch from the potatoes.
Olive Oil- Don’t use too much, a little is all it takes.
Cornstarch- Coat the sweet potatoes in cornstarch for maximum crispiness.
Space Them Out- Make sure the fries aren’t touching when baking.
Turn up the Heat- Preheat your oven to 425 degrees F.
Flip- Flip the sweet potato fries halfway through baking.
Salt- Salt the fries after they come out of the oven.
Serve Hot- Serve the fries when they are hot, fresh, and crispy!
