Baked Potato and Sweet Potato Chips

Ingredients
- 2 medium potatoes (russet and sweet potato, leave skins on)
- Cooking Spray (we used a canola spray)
- Salt and pepper to taste or seasoned salt

Preparation
Step 1
Slice potatoes to about 1/8″ thickness using a mandoline.
Step 2
Spread out in a single layer on a baking sheet sprayed with cooking spray.
Step 3
Briefly spray the tops of the potatoes with cooking spray too.
Step 4
Sprinkle with seasonings.
Step 5
Bake at 425°F for 20-25 minutes.
Step 6
Start checking the chips at about 15 minutes.
Step 7
Remove chips that are browning (sweet potatoes finish faster than russets).
Step 8
Continue to bake, but keep an eye on them.
Step 9
Let them cool and then enjoy!
