  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • 1 cup unsalted butter, cold and cut into cubes
  • 1/2 cup + 2 tablespoons cold water
  • 2 cups peeled, cored, and diced apples
  • 2 teaspoons fresh lemon juice
  • 3/4 teaspoon ground cinnamon
  • 1/4 cup granulated sugar
  • 1 egg + 1 tablespoon water for egg wash
  • Turbinado sugar for sprinkling on pies
