Ingredients
- 1 3-ounce package cream cheese, room temperature
- 1/3 cup half and half (or milk)
- 3 eggs
- 1 10-ounce package frozen chopped spinach, thawed and drained
- 1/2 cup grated cheddar or Gruyere
- 1/4 cup grated Parmesan
- 4 to 6 green onions, thinly sliced (1/2 cup finely diced red or white onion or shallots work as well)
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Optional: 1 smashed clove of garlic

The original recipe suggests using a sheet of puff pastry as the shell, but the author prefers using Martha Stewart’s Pate Brisee, minus the sugar.
The quiche can be made with different cheeses and still works.
For a crust-less version, bake in a greased glass quiche pan.
The recipe is versatile and can adapt to using different types of milk, such as heavy cream, skim, or even evaporated low-fat milk.
The crust can be par-baked, though the author generally does not find it necessary.
