- 4 medium sweet potatoes (about 3 pounds), scrubbed clean
- 4 teaspoons olive oil
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper

Preparation
Step 1
Heat your oven to 275°F.

Arrange sweet potatoes on a large, foil-lined baking sheet.
Step 3
Rub each with 1 teaspoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper until well coated.
Step 4
Bake until very soft inside and caramelized on the bottom, about 2 1/2 hours.
Step 5
Heat your broiler and run the potatoes underneath it until lightly charred on top, 1 to 10 minutes depending on the broiler's strength.
Step 6
Let potatoes cool for 10 minutes, then gently crush to expose the flesh; season with salt and finish with butter or a topping of your choice.

This dish can be enhanced with a sizzling toasted spice oil or a roasted garlic yogurt sauce.
Serve with salted, lemony yogurt and black lentils on the side, if desired.
For a spice topping, heat neutral oil, add cumin seeds, mustard seeds, chopped garlic, and red pepper flakes, then pour over the potato flesh.
To make roasted garlic yogurt, roast garlic with the sweet potatoes and mix with yogurt.
