  • 1/2 cup packed dark brown sugar
  • 2 tablespoons paprika (sweet, hot, or smoked)
  • 3 tablespoons chili powder
  • 1 tablespoon onion powder
  • 2 tablespoons kosher salt (Diamond brand)
  • Chipotle powder or ground red pepper (cayenne) to taste
  • Freshly ground black pepper
  • 1 5-pound rack spare ribs
  • 2 teaspoons cider vinegar

Preparation

Step 1

Preheat oven to 200°F.

Step 2

In a medium bowl, combine all spices and seasonings.

Step 3

Place the rack of ribs, meatier side up, on a piece of foil. Sprinkle half of the spice rub over the rack, patting it on generously, including the sides.

Step 4

Flip the rack of ribs onto the foil so they’re meatier side down and pat on the remaining rub.

Step 5

Tightly fold the foil to seal packets.

Step 6

Set a metal rack over a baking sheet and place foil-wrapped ribs on top.

Step 7

Bake for 4 hours, then reduce temperature to 175°F for 2 more hours, or until a fork easily penetrates the meat.

Step 8

Open the packet carefully and pour accumulated juices into a saucepan. Bring to a full boil and reduce until syrupy.

Step 9

Stir in vinegar for barbecue sauce.

Step 10

Cut the ribs apart and spread them on a serving tray.

Step 11

For extra caramelization, broil them for a couple of minutes.

Step 12

Serve ribs with sauce on the side.

Cooking time can be adjusted with different temperature settings:
2.5 to 3 hours at 300°F, 3.5 to 4 hours at 250°F, or 4 hours at 225°F.
