- 1/2 cup packed dark brown sugar
- 2 tablespoons paprika (sweet, hot, or smoked)
- 3 tablespoons chili powder
- 1 tablespoon onion powder
- 2 tablespoons kosher salt (Diamond brand)
- Chipotle powder or ground red pepper (cayenne) to taste
- Freshly ground black pepper
- 1 5-pound rack spare ribs
- 2 teaspoons cider vinegar

Cooking time can be adjusted with different temperature settings:
2.5 to 3 hours at 300°F, 3.5 to 4 hours at 250°F, or 4 hours at 225°F.
For the sauce, use it judiciously as it will be fairly salty.
