Ingredients
2-4 servings
- 3/4 to 1 pound seedless cucumber, washed and chopped into chunks
- 2 thin or 1 regular scallions, thinly sliced
- 1 large avocado, pitted and diced
- 1 to 2 tablespoons mayonnaise
- Juice of half a lime, plus more to taste
- Salt and hot sauce (we used Sriracha) to taste
- Chopped cilantro or flat-leaf parsley to garnish

Preparation
Step 1
Combine cucumber, scallions, and avocado in a bowl.
Step 2
Whisk together 1 tablespoon mayo, lime, and seasonings, adjusting levels to taste.
Step 3
Add second tablespoon of mayo if you'd like the dressing creamier.
Step 4
Drizzle salad with dressing and garnish with cilantro or parsley.
Step 5
Repeat again tomorrow.

Adaptations include adding Romaine hearts for bulk or changing the dressing ingredients to suit preferences.
Optional variations include using lemon and dill instead of lime and cilantro, or yogurt instead of mayo.
A Japanese-inspired version could use toasted sesame oil, miso, and rice vinegar with sesame seeds for garnish.
