Ingredients

  • 1/4 cup packed dark brown sugar
  • 1/2 cup paprika (sweet or hot)
  • 1/4 cup chili powder
  • 2 tablespoons ground red pepper
  • 2 tablespoons ground cumin
  • 1 teaspoon ground mace
  • 1/4 cup salt
  • 1/4 cup cracked black peppercorns

Chef’s notes

These ribs should not be sauced. Adding sauce would be an abomination, according to Molly.
The recipe can be made less spicy by omitting the cayenne pepper and more straightforward by omitting the cumin.
Nutmeg can be used in place of mace.
The ribs pair well with basic coleslaw and BBQ beans.
Hush puppies are a great accompaniment, though a deep fryer is needed.
