- 2/3 cup (170 grams) creamy peanut butter
- 2/3 cup (80 grams) powdered sugar
- Two pinches of flaky sea salt
- Cookie
- 1/2 cup (115 grams or 4 ounces) unsalted butter, at room temperature for a mixer, cold is fine for food processor
- 1/2 cup (100 grams) granulated sugar, plus more to coat cookies
- 1/2 cup (95 grams) dark brown sugar
- 1/4 cup (65 grams) creamy peanut butter
- 1 large egg
- 1 teaspoon (5 ml) vanilla extract
- 1 1/3 cups (175 grams) all-purpose flour
- 2/3 cup (55 grams) dutched cocoa powder (see note)
- 2 teaspoons baking powder
- 1/4 teaspoon fine sea or table salt

Chef’s notes
My changes include making the filling first and freezing it for easier assembly, adding sea salt to the filling, and reducing the filling amount slightly. I also adjusted the chocolate cookie ingredients for a darker, more chocolatey flavor.
