- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 1/4 cups buttermilk
- 3/4 cup canola oil
- 1 egg
- 2 teaspoons vanilla
- 1/2 cup sugar
- 1 1/2 cups fruit, diced into bite-sized pieces
- 1/2 cup + 4 tablespoons flour (streusel)
- 1/3 cup sugar (streusel)
- 1/3 cup brown sugar (streusel)
- 1 teaspoon cinnamon (streusel)
- 1/2 cup pecans, almonds, walnuts or oats (streusel)
- 1/4 teaspoon salt (streusel)
- 5 tablespoons melted butter (streusel)

Experiment with different fruit and flavor combinations, but do not exceed 1 1/2 cups of any combination, or muffins may fall apart.
For blackberry-orange flavor, omit cinnamon, add 1/4 cup fresh orange juice to the wet ingredients, and 1 tablespoon orange zest to the dry ingredients. Use 1 1/2 cups blackberries, and top with orange-sugar.
