Ingredients

12-14 muffins
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 1/4 cups buttermilk
  • 3/4 cup canola oil
  • 1 egg
  • 2 teaspoons vanilla
  • 1/2 cup sugar
  • 1 1/2 cups fruit, diced into bite-sized pieces
  • 1/2 cup + 4 tablespoons flour (streusel)
  • 1/3 cup sugar (streusel)
  • 1/3 cup brown sugar (streusel)
  • 1 teaspoon cinnamon (streusel)
  • 1/2 cup pecans, almonds, walnuts or oats (streusel)
  • 1/4 teaspoon salt (streusel)
  • 5 tablespoons melted butter (streusel)

Experiment with different fruit and flavor combinations, but do not exceed 1 1/2 cups of any combination, or muffins may fall apart.
For blackberry-orange flavor, omit cinnamon, add 1/4 cup fresh orange juice to the wet ingredients, and 1 tablespoon orange zest to the dry ingredients. Use 1 1/2 cups blackberries, and top with orange-sugar.
Other flavor ideas include espresso chocolate chip, cherry almond, ginger peach, fruit + chocolate, and fruit + nut variations.
