- 1 1/2 tablespoons butter
- 1 1/2 tablespoon oil
- 5–6 small corn tortillas, cut into strips
- 1 jalapeno, minced
- 1 clove garlic, minced
- 5 eggs, beaten
- 1/2 cup shredded Pepperjack or other cheese
- 1/2 cup chopped cilantro
- salt to taste
- black beans, Cotija cheese, salt, pepper, avocado, tomato salsa for serving

This recipe was super easy and DELICIOUS! My husband said it was an A+ recipe, so it will be in heavy rotation at our house from now on.
Can use tortilla chips instead of frying your own tortillas.
Add meat by browning up some chorizo.
Use flour tortillas instead of corn tortillas if preferred.
To make vegan, skip cheese, use olive oil instead of butter, and use tofu scramble instead of eggs.
