  • 1 lb boneless skinless chicken thighs
  • 1/2 tablespoon soy sauce
  • 1/2 tablespoon avocado oil
  • 1 clove garlic, grated (or 1 tsp of garlic paste, or 1/2 teaspoon garlic powder)
  • 2–3 tablespoons taco seasoning (I use Siete brand)
  • 1/2 avocado
  • 1/2 cup mayo
  • 3-ounce chunk of Cotija cheese
  • 1 big handful of cilantro stems and leaves (roughly 1/2 cup)
  • 1 clove garlic
  • Juice of 1–2 limes (2 tablespoons)
  • 2 tablespoons water (more as needed)
  • Tortillas
  • Limes, cilantro, and onion for topping

Preparation

Step 1

Trim the fat off the chicken thighs if you want. Toss the chicken thighs with soy sauce, oil, and garlic. Sprinkle with taco seasoning and give it a quick mix.

Step 2

Place the chicken in the basket of an air fryer. Air fry at 400 degrees for 10-12 minutes until it is crusty, golden, juicy, and delicious.

Step 3

While the chicken is cooking, blitz up the sauce in a small food processor or blender. Adjust thickness by adding water or more avocado/mayo as needed.

Step 4

When the chicken is done, let it stand for a few minutes and then roughly chop or pull it into bite-sized pieces. Squeeze lime juice over it.

Step 5

Serve with a dollop of sauce in a tortilla, a pile of juicy chicken, and finish with cilantro and diced onion. Add more sauce if desired.

Oven Instructions:
Bake at 425 degrees for 20 mins. If using chicken breasts, slice them in half if they’re thick, and bake at 400 degrees for 20 minutes. Cook chicken to 165 degrees.
If the surface looks like there's not enough seasoning coverage, sprinkle with more taco seasoning and oil or brush on some extra flavor paste from the bowl.

Every taco seasoning is different, so experiment to find the best one for you. Some have cornstarch which helps create a crisped, golden exterior.
I use the Siete taco seasoning (mild), it's mild enough for my girls, and also delicious enough that my husband and I really love it.
