- 3-4 lb top round roast beef*, at room temperature 1.5 to 2 hours before cooking
- 3 Tbsp olive oil
- 1 Tbsp fresh rosemary
- 1 Tbsp minced garlic, from 3 cloves
- 2 tsp thyme leaves, or 1/2 tsp dried thyme
- 1 1/2 tsp fine sea salt
- 1 tsp freshly ground black pepper
- 1/4 cup cold water
- 1 1/2 Tbsp corn starch
- 1/2 cup dry red wine
- 1 1/2 cups beef broth
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 1/4 tsp fine sea salt, or to taste
- 1/4 tsp freshly ground black pepper, or to taste
- 2 Tbsp unsalted butter

*Roast Substitutions:
If you’re unable to find Top Round Roast (AKA Inside Round), other great choices are Top Sirloin Roast (AKA Top Butt), Bottom Round Roast (AKA Rolled Rump Roast), or Eye Of Round Roast.
**Baking Time Example:
For a 3 1/2 lb roast, bake at 450 ̊F for 15 minutes then at 250 ̊F for 1 hour and 45 minutes for medium-rare.
