  • 4 sweet potatoes (peeled and diced)
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon coconut sugar (or granulated sweetener of choice)
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon freshly ground black pepper
  • 4 cups water (or vegetable broth)
  • 1 13.5-ounce can coconut milk
  • sea salt or pink salt (to taste)

Saute.

Step 3

Set electric pressure cooker to saute function. Add oil, garlic and ginger. Saute for 5 minutes or until beginning to brown.

Add spices and sweet potatoes.

Stir in sweet potatoes, paprika, garlic powder, sugar, cumin and pepper.

Add water and milk.

Add water (or broth) and coconut milk. Stir well.
