- 2 cups quick cooking oats (gluten-free certified if necessary)
- ½ cup Earth Echo Golden Superfood Bliss
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 2 tablespoons pumpkin seeds (raw or roasted)
- 2 tablespoons chia seeds
- 1 tablespoon ground flaxseed
- 2 ripe bananas (mashed into a puree)
- ¼ cup milk of choice (I like to use oat milk)
- ¼ cup maple syrup

Preparation
Step 1
Preheat the oven to 325°F. Line a baking sheet with parchment paper then set aside.
Step 2
In a large mixing bowl combine the oats, Earth Echo Golden Bliss, baking powder, salt, pumpkin seeds, chia seeds, and ground flax seeds. Mix well.
Step 3
To the dry ingredients, add the mashed bananas, milk and maple syrup. Mix until all is well combined.
Step 4
Place the cookie dough into the refrigerator to chill for 30 minutes before moving on to the next step.
Step 5
Take a rounded tablespoon of cookie dough and place it onto the parchment-lined baking sheet. Flatten the dough with the palm of your hand to form a cookie shape. Repeat with the remaining batter.
Step 6
Bake the cookies for 12-15 minutes or until firm to the touch.
Step 7
Let the cookies cool for a few minutes before serving.
