Ingredients
2 servings
- 3/8 cup salted peanuts
- 2 tbs toasted sesame oil
- 2 garlic cloves
- 1/4 tsp ginger (ground)
- 1 serrano pepper
- 1 medjool date (pitted)
- 1/3 cup water
- 1 tbs apple cider vinegar
- 12 oz brown rice pasta
- 1/2 red onion (finely chopped)
- 2 mini sweet bell peppers (finely chopped)
- 1 garlic clove (minced)
- 1 cup peas (steamed)
- sesame seeds & dried cilantro for garnishing

Preparation

Spicy Peanut Sauce

In a food processor, blend peanuts & sesame oil until smooth.

Add remaining ingredients & process until evenly mixed.
Step 4
Use right away or store in an airtight glass container in the fridge for up to 2 weeks.

Brown Rice Pasta w/ Veggie Confetti

Cook brown rice noodles until al dente. Drain & set aside.

Steam peas, set aside.

In a sauce pan over medium heat saute onion, garlic & peppers in a dash of sesame oil until all begins to brown.

Fill bowl(s) with pasta, sprinkle with veggie confetti, drizzle with
