- 1 cup gluten free all purpose flour
- 1/4 cup almond flour
- 1/4 cup tapioca flour
- 1/2 cup coconut sugar
- 2 tsp baking soda
- 2 tsp ground cinnamon
- 1 1/2 tsp baking powder
- 1/2 tsp ground ginger
- 1/2 tsp sea salt
- 1/4 tsp ground nutmeg
- 1/2 cup plain greek yogurt
- 1/4 cup coconut oil (melted)
- 1/4 cup raw honey
- 1 egg (beaten)
- 2 tbs lemon juice
- 2 tsp vanilla extract
- 2 cups carrots (grated)
- 1/2 cup coconut (shredded)
- 1/2 cup golden raisins
- 1/2 cup walnuts (chopped)
- 1 apple (grated)
- 1 tbs poppy seeds

Preparation
Step 1
Preheat oven to 350°F.
Step 2
Grease or line a loaf pan with parchment paper. Set aside.
Step 3
In a large mixing bowl. Sift together ingredients all purpose flour through nutmeg.
Step 4
In another large mixing bowl, combine yogurt, oil, honey, egg, lemon juice and vanilla. Whisk until smooth.
Step 5
Pour your wet ingredients into your dry ingredients. Mix until evenly combined.
Step 6
Gently fold in carrots, coconut, raisins, walnuts, apples and poppy seeds until evenly distributed.
Step 7
Pour your bread batter into your prepared loaf pan.
Step 8
Bake for 45-55 minutes, or until firm, turning golden and a toothpick inserted into center comes out clean.
Step 9
Let cool before removing from loaf pan, slicing and serving.
