- 1 cup gluten-free flour blend
- 1/2 cup almond flour
- 1/2 cup unsalted butter, softened
- 1/3 cup granulated sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup raspberry jam (or any preferred jam)
- Powdered sugar for dusting

Preparation
Step 1
Preheat your oven to 350°F (175°C).
Step 2
In a large mixing bowl, cream together the butter and sugar until light and fluffy.

Add the vanilla extract and mix well.

In another bowl, whisk together the gluten-free flour blend, almond flour, and salt.

Gradually add the dry ingredients to the butter mixture, mixing until a dough forms.

Wrap the dough in plastic wrap and chill for at least 1 hour.

Roll out the chilled dough on a lightly floured surface to about 1/8 inch thickness.

Use a cookie cutter to cut out an even number of cookies. Use a smaller cutter to cut out shapes in the center of half of the cookies.

Place the cookies on a baking sheet lined with parchment paper.

Bake for 8-10 minutes, or until the edges are lightly golden.

Allow the cookies to cool completely on a wire rack.
Step 12
Spread a layer of jam on the whole cookies, then top with the cut-out cookies to make a sandwich.

Dust the tops with powdered sugar before serving.
