  • 1 tablespoon extra-virgin olive oil
  • 1 medium yellow onion, diced, about 1½ cups
  • 2 garlic cloves, minced
  • 1 carrot, chopped
  • 2 cups cubed butternut squash
  • 1 poblano pepper, stem and seeds removed, and diced*
  • 1 teaspoon chili powder*
  • ½ teaspoon chipotle paste or powder*
  • 1 cup halved cherry tomatoes, or 1 cup canned diced tomatoes
  • 2 teaspoons apple cider vinegar
  • 1 cup cooked black beans, drained and rinsed
  • 2 to 3 cups vegetable broth
  • Juice of ½ to 1 lime
  • Sea salt and freshly ground black pepper

*if you're sensitive to spice, start with less, you can always add more. If your chili is too spicy in the end, add more lime juice and/or splashes of apple cider vinegar to tone it down.
