You might need to do this in batches. Step 2 Trim and finely slice the spring onions, putting the green tops aside for garnish. Peel and finely chop the ginger. Add the prawns to the party, drizzle over the soy, then chop it all together until fairly fine. Crack over the egg and mix to combine (or blitz everything in a food processor, if you prefer). Step 3 Spread the prawn mixture on the untoasted side of the bread right to the edges, then cut each piece into four triangles and sprinkle over the sesame seeds. Evenly space in the drawer, in batches if needed, spritz with olive oil, and cook for 12 minutes at 180ºC, or until golden and cooked through. Step 4 Transfer to a serving platter and sprinkle over the reserved spring onions. Great with sweet chilli sauce, or your favourite condiment, for dunking.
