- 1/2 pound whole wheat pizza dough (store-bought or homemade (recipe follows)
- 1/4 cup extra virgin olive oil
- 3-4 cloves garlic (minced or grated)
- 1 tablespoon lemon juice and zest of 1/2 a lemon
- 1 teaspoon dried basil
- kosher salt and pepper
- 2 cups fresh baby spinach
- 1 (12 ounce) jar marinated artichoke hearts, drained
- 8 ounces fresh mozzarella (torn)
- 1/4 cup grated parmesan cheese or crumbled blue cheese
- 1/2 of a Meyer lemon (thinly sliced)
- 2 tablespoons raw pine nuts
- crushed red pepper flakes (fresh basil and mircogreens, for serving)
