  • 1 pound wild caught salmon, cut into 4 pieces
  • 2 tablespoon olive oil
  • 3/4 cup pure maple syrup
  • 5 tablespoons bourbon
  • 1/4 cup soy sauce
  • 1/4 cup orange juice
  • 1/2 teaspoon cayenne pepper
  • salt and pepper (taste)
  • 2 cup fresh cranberries
  • 1 cup chopped apples (I used honeycrisp)
  • 1/4 cup apple cider vinegar
  • 3/4 cup brown sugar (you may need a little less or little more to your taste)
  • 2 tablespoons freshly grated orange zest
  • 1 tablespoon fresh ginger (grated)
  • 1 small cinnamon stick
  • 1 jalapeno (seeded + chopped (optional)
  • 3 pounds baby red potatoes (each 1 1/2 to 2 inches in diameter)
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon coarse sea salt
  • 1-2 tablespoon fresh rosemary (chopped + more for roasting)
