- 1 chipotle pepper
- 1 teaspoon adobo sauce
- 1 tablespoon chile powder
- 2 teaspoons cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon onion powder
- 1/4 teaspoon crushed red pepper flakes
- 1 teaspoon pepper
- 1 teaspoon kosher salt
- 3 cloves large garlic (minced or grated)
- 1/4 cup olive oil (plus more if needed)
- 2 steaks of your choice (I like New York strips)
- 2-3 cup cooked basmati rice (hot)
- 1/4 cup cilantro (chopped)
- 1 tablespoon fresh lime juice
- 2-4 large burrito size tortillas
- 3/4 cup pepper jack cheese (shredded (use more or less to your liking)
- 3/4 cup cheddar cheese (shredded (use more or less to your liking)
- Optional add ins: salsa (guacamole, lettuce, black beans, sour cream or greek yogurt)
