Step 2 In a medium size bowl whisk together the adobo sauce, honey, olive oil, chili powder, garlic powder, pepper, oregano and salt. Toss in the peanuts and the whole chipotle chile. Toss well and spread on a baking sheet or into a 9x13 baking dish. Bake for about 10 minutes and then stir and bake for another 10 minutes, just until you start to smell the peanuts and chipotle. Allow to cool five minutes. Step 3 Transfer the peanuts, chipotle chile and all the juices from the pan. Pulse and process until smooth, about 3 to 5 minutes, scraping down the sides if needed every so often. Makes about 1 cup of peanut butter. Step 4 Preheat the grill, grill pan or skillet to medium high heat. Step 5 Rub or brush the outsides of the bread with olive oil. On the insides of each piece of bread evenly spread a tablespoon to a tablespoon and half of the chipotle honey roasted peanut butter. Top two of the slices of bread with a few thinly sliced peaches and then place the tops on. Step 6 Grill or cook on each side until bread is golden brown, about 2 to 3 minutes per side.
