  • 4 slices thick cut bacon (chopped (can be left out if needed)
  • 1 sweet onion (finely chopped)
  • 1 jalapeno (seed and diced)
  • 1 rib celery (chopped)
  • 2 cloves garlic (minced or grated)
  • 1/2 teaspoon dried thyme
  • 2 cups of your favorite pale ale (divided)
  • 2 1/4 cups chicken broth
  • 4 tablespoons butter
  • 1/4 cup flour
  • 1 cup heavy cream
  • 16 ounces sharp cheddar cheese (shredded)
  • 4 ounces smoked gruyere cheese (shredded)
  • 1/2 teaspoon pepper
  • 1/4 teaspoon salt
  • 6 green onions (chopped, for serving)
  • 6 cups air popped popcorn
  • 2 cup crushed tortilla chips (lightly crushed)
  • 5 tablespoons butter (melted)
  • 1 tablespoon chili powder
  • 1/4 teaspoon cumin
  • salt and pepper (to taste)
  • 1/2 cup sharp cheddar cheese (shredded)
