  • 1 pound boneless skinless chicken breast
  • 2 tablespoons butter (softened (or olive oil)
  • 2 tablespoons brown sugar
  • 2 teaspoons chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt and pepper
  • 1 cup sharp white cheddar cheese (shredded)
  • 1 cup smoked gouda cheese (shredded)
  • 16-20 corn tortillas
  • 1 chopped jalapeno (juice of 1 lime, fresh cilantro, sliced avocado and cotija cheese, for serving)
  • 2 pounds tomatillos
  • 1 1/2 cups fresh cranberries (plus 1/2 cup chopped cranberries, for garnishing)
  • 4 cloves garlic (skins on)
  • 1 tablespoon olive oil
  • 2 in chipotle chilies adobo (use 1 for less heat)
  • 2 tablespoons tomato paste
  • 1 tablespoon honey
  • 2 cups chicken broth
  • 1/4 cup canned coconut milk or cream
  • salt (to taste)
  • 1/2 cup fresh cilantro (chopped)
