- 2 tablespoons butter or oil,* divided
- 1 small white onion, peeled and diced
- 4 cloves garlic, minced
- 2 (15-ounce) cans pinto beans, rinsed and drained
- 1/2 cup vegetable stock
- 1 teaspoon chili powder (or you can use 1/2 teaspoon chili powder + 1/2 teaspoon chipotle chili powder)
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1 tablespoon freshly-squeezed lime juice
- fine sea salt and freshly-cracked black pepper
- optional garnishes: finely-chopped fresh cilantro, crumbled or shredded cheese, diced tomato, and/or sliced jalapeño
