  • 1 (14-ounce) bag of coleslaw*
  • 1 cup shredded carrots
  • 1 yellow or red bell pepper, thinly sliced or diced
  • 1/2 cup finely-chopped fresh cilantro
  • 1/2 cup thinly sliced green onions
  • 1/3 cup sliced or slivered almonds, toasted
  • toasted sesame seeds
  • 2 tablespoons avocado oil (or olive oil, or any other mild-flavored oil)
  • 1 tablespoon low-sodium soy sauce*
  • 1 tablespoon maple syrup or honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon toasted sesame oil
  • 1/2 teaspoon ground ginger
  • 1 small garlic clove, pressed or minced (or 1/4 teaspoon garlic powder)
  • sea salt and freshly-cracked black pepper

Feel free to add a cooked protein (such as chicken, steak, shrimp or tofu) and an avocado to really kick this slaw up a notch.
This recipe is flexible. You can add extra fresh veggies like cucumber, radishes, edamame, or avocado.
Add fruit like diced fresh mango, pineapple or orange.
Add crispy wonton strips or more nuts like chopped peanuts or cashews for extra crunch.
For a spicy kick, add sriracha or hot chili oil to the vinaigrette.
