- 8 ounces uncooked wide rice noodles
- 3 tablespoons oil, divided
- 1 medium onion, thickly sliced
- 1 tablespoon minced fresh ginger
- 4 cloves garlic, minced
- 4 scallions, cut into 2-inch pieces
